Awesome!
I make a quick lunch of feta, cucumber, tomato and a little celery (for crunch) seasoned with salt and pepper.
It is quick and very tasty. -

So I’ll start out by saying that we are not vegetarian but we don’t cook much meat in our house. We buy meat maybe once a month, maybe less. Although we do buy fish a little more than that. But anyway, we eat a plant based diet.

@roundtheworldgirl, what a bummer! My husband says the same thing happens to him with all melons, watermelon, cantaloupe, honeydew… He still eats a little in the summer though.

Oh, eggplant. I miss it! I loved it until I suddenly became allergic to it after my son was born. It’s been two years and it still makes my whole mouth itch when I eat it (and my hands if I cook with it). I deal with the discomfort for the occasional mouthful of baba ghanoush but eggplant parmesan is out 🙁

Mmmmmm eggplant! I tried to grow it last year and failed :/ is it a fall thing? I tried growing it in the summer!
Sarvi, our farmer’s market opens this weekend and I’m sooooo excited for some local eggs! I totally agree, supermarket eggs leave a lot to be desired!

If I had eggs like those, really fresh, I bet I’d eat loads of them. Supermarket eggs are really sad specimens. Pale yolks, shells barely there. I splurged on proper eggs from the farmer’s market today. Had to queue for them!
Moussaka sounds fab.

We are lucky with eggs, it is good we like them.
Another 1/2 dozen egg plants were dropped off yesterday so I think moussaka is on the menu again tonight.

Oh my! All of these recipes sound great!
One of my favorite meals to make are pouches. Super quick. Last night we layered salmon on top of asparagus (it’s asparagus season here yay), drizzled with olive oil, salt and pepper and topped the salmon with a couple sprigs of thyme and a couple slices of lemon. Does anyone have a favorite Bombay potatoes recipie? Hubby had some at a restaurant that also had chickpeas included. We’ve been trying to reproduce it and had some great dinners but still haven’t found a favorite.

Has anybody got a good recipe for almond cookies? I’m looking for the ‘Chinese’ kind that I used to see in pink paper boxes, with a whole almond pressed into the top. Not sure how authentic they are!
