Wool Knit for the Helsinki Jacket?

I found a beautiful black and white herringbone double wool knit fabric I would love to use for making the Helsinki jacket but your fabric recommendations are for woven wool. Could this work and what are the considerations? Or should I just stick with the woven wool options?
