Sailor collar?

I'm making sailor suits from my own pattern and trying to decide if the collar piece should be made out of a single thickness or a double thickness. I'm planning to edge it in bias tape as part of the stripes pattern. The fabric is a nice heavy sateen cotton with a tiny bit of stretch. Thoughts on how to decide single vs double? Pictures show front and back. The back is split for the shirt opening. Thanks!
